Apple Rabdi
|
Apple rabdi is a very delicious sweet dish and easy to make. It tastes amazingly good and it is a very simple treat. Apples are also great to have when on a weight loss program. Try to have them with their peels as most of the beneficial things like vitamins, minerals and fiber lie just under the skin. |

Ingredients
• Apples - 2 medium size
• Milk - 1 liter
• sugar - 4 tbsp
• Cardamom (elaichi) powder - 1/4 tbsp
• Almonds - 6-8
• Pistachios - 6-8
• Cashew nuts - 6-8

Method
- Wash, peel and grate 2 apples.
- Boil the milk in a heavy bottomed pan and simmer till reduced to half the original quantity.
- Add sugar and cook on low heat, stirring continuously. Till sugar completely mix to reduced milk.
- Add the grated apples to reduced milk and mix well. Simmer for 5 to 7 minutes.
- Add cardamom (elaichi) powder, almonds, pistachios, and cashew nuts and mix well.
- Pour into a serving dish. Serve hot or cold.
Note : Though I have used apples in this rabdi, you can use whatever fruit strikes your fancy the day you make it. Try fruits like pears, peaches or mango.
